ONE SWEET STEP AT A TIME

Let’s make it.

01

Get ready

Heat a conventional oven to 175°C. Place paper cases in a 12-hole muffin tin. Mix the flour and baking powder together.

02

Make the red velvet batter

Beat butter and sugar until pale. Mix in the eggs one at a time, vanilla and a small amount of red colouring. Fold in flour, cocoa, baking powder and buttermilk.

03

Bake evenly

Divide between the cases, filling each about two-thirds full. Bake for 18–22 minutes until springy and a skewer comes out clean.

04

Cool completely

Leave in the tin for 5 minutes, then move to a rack. Allow at least 40 minutes before frosting.

05

Cream cheese frosting

Beat the frosting butter with icing sugar until smooth, then briefly mix in 80 g cream cheese. Add frosting milk only if needed. Do not overbeat the cream cheese frosting.

06

Finish

Spoon or pipe over fully cooled cupcakes. Refrigerate until serving.

A helpful little detail

A chilled cream cheese frosting is easier to handle. Add the cream cheese last and mix briefly.

Keeping it lovely

Keep covered in the refrigerator for up to 3 days; bring to room temperature briefly before serving.

Allergens

Wheat, milk and eggs. Check all flavour additions for nuts and soy. Always check your own ingredient labels.
