Ingredients: 200 g plain flour; 50 g cocoa powder; 220 g caster sugar; 2 tsp baking powder; 1/2 tsp bicarbonate of soda; 2 large eggs; 180 ml milk; 100 ml neutral oil; 150 ml hot water; 1 tsp vanilla extract; 200 g dark chocolate, for ganache; 180 ml whipping cream, for ganache; 100 g chocolate-hazelnut spread

ONE SWEET STEP AT A TIME

Let’s make it.

Prepare

Heat a conventional oven to 175°C. Grease and line two 18 cm round tins. Whisk flour, cocoa, sugar, baking powder and bicarbonate of soda in a bowl.

Mix the batter

Whisk eggs, milk, oil and vanilla separately. Stir into the dry ingredients, then carefully stir in the hot water. The batter will be quite fluid.

Bake

Divide between the tins and bake for 25–32 minutes until a skewer comes out clean. Start checking at 25 minutes.

Cool

Leave in the tins for 10 minutes, then turn onto a rack and cool completely before assembling.

Make ganache

Warm the cream until steaming, pour over the chopped ganache chocolate, wait 2 minutes and stir until smooth. Leave until spreadable.

Assemble with hazelnut spread

Spread 60 g chocolate-hazelnut spread between the cooled cake layers, cover with ganache, then finish with the remaining spread.

A helpful little detail

Do not ice warm layers. If the ganache is too loose, leave it to thicken rather than adding more chocolate immediately.

Keeping it lovely

Cover and refrigerate for up to 3 days. Bring slices toward room temperature before serving.
