Heat a conventional oven to 150°C. Place four shallow ramekins in a deep roasting tray.
Heat cream and vanilla until steaming. Whisk yolks and 60 g sugar until combined. Slowly whisk in the warm cream, then strain into a jug.
Divide between ramekins. Pour hot water into the tray to reach halfway up their sides. Bake for 30–40 minutes until set at the edges with a gentle wobble.
Carefully lift out, cool at room temperature for about 30 minutes, then refrigerate for at least 3 hours.
Sprinkle each chilled custard with 1 tsp sugar. On a heatproof surface, use a kitchen blowtorch according to its instructions until the sugar melts and turns amber. Let the crust set for 1 minute before serving.
Keep the sugar layer thin and even. Caramelise just before serving so the top stays crisp.
Refrigerate covered custards for up to 2 days; add the sugar crust only before serving.
Milk and eggs. Always check your own ingredient labels.
