ONE SWEET STEP AT A TIME

Let’s make it.

01

Line the tin

Heat a conventional oven to 220°C. Line an 18 cm springform tin with two overlapping sheets of baking paper extending at least 5 cm above the rim. Set on a baking tray.

02

Mix until smooth

Beat cream cheese and sugar together. Mix in the eggs one at a time, then the vanilla and salt.

03

Add the cream

Mix the flour with a little cream to make a smooth paste, then add the rest of the cream. Stir this into the cheese mixture without whipping in excess air.

04

Bake to colour

Bake for 30–40 minutes until deeply golden, with set edges and a centre that still wobbles gently. Loosely cover with foil if the top darkens too quickly.

05

Cool and settle

Cool in the tin at room temperature for about 1 hour, then refrigerate for at least 6 hours. Unmould only when fully chilled.

A helpful little detail

The dark top and rustic paper-lined edge are part of this home-style cheesecake. The centre settles and firms as it chills.

Keeping it lovely

Keep covered in the refrigerator for up to 3 days. Return leftovers promptly.

Allergens

Milk, eggs and wheat. Always check your own ingredient labels.
