Heat a conventional oven to 175°C. Line a 20 cm square tin with baking paper, leaving an overhang on two sides.
Melt the butter and chocolate in a heatproof bowl over barely simmering water. Do not let the bowl touch the water. Stir until smooth and leave until warm.
Whisk eggs and sugar for 2 minutes. Stir in vanilla and the warm chocolate mixture. Fold in flour, cocoa and salt just until combined.
Spread in the tin and bake for 22–27 minutes, until the edges are set and a skewer has moist crumbs rather than wet batter.
Leave in the tin for at least 1 hour. Lift out, then cut into 9 squares with a clean knife.
Stop mixing when the flour disappears. Cooling is part of the recipe: a warm brownie will not slice as neatly.
Keep airtight for up to 3 days, or freeze individually for up to 1 month.
Wheat, eggs and milk. Check chocolate packaging for soy and traces of nuts. Always check your own ingredient labels.
